This is Saar Riesling at full volume. Van Volxem’s Trocken is dry, racy and intensely alive, made from organically farmed 30-year-old vines in the steep slate soils of Wiltingen.

Spontaneously fermented and aged in stainless, it’s all about tension and clarity. Lime zest, white peach, crushed slate and a little jasmine lift. The acidity is precise, the texture is fine, and the finish hangs on like mist in the valley.

This is not the sweet stuff. It’s the style that made the Mosel famous. Electric, mineral and incredibly pure & dry.

Roman Niewodniczanski and the team at Van Volxem are reviving the Saar’s legacy through thoughtful farming and restrained winemaking. This bottle is a sharp reminder of what dry German Riesling can be when it’s grown and made with care. Serve chilled, drink slowly. It’s worth it.
