For a lot of East living Sydney-siders it doesn’t get more “Sydney” than the view from the Icebergs. Sat in their gorgeous dining room, slurping an oyster and gazing upon the sparkly big blue and crescent of bright sand, dotted with sunshine soakers; the only thing missing could be a cold, crisp glass of rosé?

Maurice Terzini, professional rosato drinker has collaborated with Fox Wine Company and one of our favourite winery projects to satiate any summer loving drinker. Sassara Vini, based near Lake Garda, knows a thing or two about views over beautiful bodies of water, so the coupling was a perfect match. A blend of Corvina, Rondinella and Molinara, grapes typically reserved for making Valpolicella, just a light press and off to a fibreglass tank. No filtration, no added yeast, no chemical products and no SO2. The result is a kissed drink, full of wild strawberry, red licorice, pink grapefruit and a sprinkle of sea salt. Fun, juicy, we’re calling the drink of summer.
