Floating in on a fluffy cloud of chiffon cake, dotted with meyer lemons, peach leaf, yellow apples and the flakey, warm pastry of a fresh croissant. The mouthfeel is creamy and generous, warming even. A delicate yet more-ish sparkling wine that fills the nooks of one's heart. It’s a sparkling wine that one can enjoy throughout a meal, and even if you forgot about it on the kitchen bench and it went flat, it stuns as a still wine. We love a wine that can do both. Domaine Alice Beaufort is a project from the widely lauded Champagne house, André et Jacques Beaufort. They are one of the longest running Champagne houses to cultivate vines organically, since 1971. The vines of le Petit Beaufort sit just outside the official Champagne appellation area, very close to the Aube region in Southern Champagne. Quentin Beaufort, son of Jacques, named the Domaine after his wife Alice. They use the same methods Quentin learned from his father to make wines that are just astonishingly good.
